Breakfast Burritos - Camp Style

So nothing worse than a night late night while camping and than having to wake up early the next morning and make breakfast from scratch, no thank you. Been there, done that. I make these flavorful burritos at home ready for the morning. Just make a fire in the morning, put them on the grill and BOOM, they are ready! Bonus, no dishes!

Made ahead of time so the morning can be spent sipping coffee and relaxing instead of doing dishes

We love camping but man, it's a lot of work with or without kids. But now that we have kids my favorite thing to do is prep as much food as I can while at home. These burritos are a must! They are filling without feeling stuffed and they are packed with a ton of flavor.
Breakfast Burritos - Camp Style -Makes 8 burritos
8 links of Turkey Breakfast Sausage (or breakfast sausage of your choice)
1 Bell Pepper (Your choice of color)
1/4 of a large onion
1 Pound of Potatos (I used mini yukon golds)
8 eggs ( 1 per burrito)
Cheese ( Chiefs Choice, I used graded mexican cheese)
8 Tortillas
Cumin - 1.5 tablespoon for potatoes & 1 tablespoon for eggs
Smoked Paprika - 3ish tablespoons
Olive Oil - drizzles
Salt - 1 tablespoon for potatoes & 1 teaspoon for eggs
Pepper - sprinkle for potatoes
Garlic Powder - 1 teaspoon for potatoes & 1/2 teaspoon for eggs
Little Butter for eggs, but chefs choice if choice to add
Foil - for wrapping your burritos and cooking on the grill
* Other toppings I put on while camping (I have them prepped for another nights dinner so this is totally optional)
Green Onions
Sour Cream
Hot Sauce
Guacamole
I do this prep at home:
Start the potatoes first since they take the longest. I start by getting my steamer ready to cook the potatoes. I use my largest pot with a lid and my steamer basket. If you don't have a steamer basket you could boil the potatoes. Same goes for either method just keep a close eye on them to ensure they don't get overcooked and mushy, we are not making mashed potatoes we need them to be a little firmer. For steaming fill your pan up with water so the water is just at the basket base without touching the potatoes. Cooks so the water is boiling (keep an eye on your water level too, add more if needed) Maybe about 7 minutes or so till they will be done. Use a knife and poke test them, should go in with a little resistance. Done? Perfect, let them cool on a large cutting board. They need to cool so you can handle those hot potatoes!
While the potatoes are cooling, I take advantage of the down time by cooking my eggs. Grab a big bowl, fork or whisk and get cracking (those eggs)! Grab another big skillet (I use a big non stick or stainless steel, something easy to clean). Drizzle some olive oil and maybe a little butter (chefs choice) to your pan at medium high. Add your spices listed above to your bowl and mix, mix, mix. *Mama side note my kiddos LOVE this part, I let them mix and count their strokes so they one, both get an equal turn and two, they work on their counting! Go ahead and add your egg mixture to your pan. We are just making scrambled eggs, so if you have your preferred method go ahead and make them your way, no real right or wrong, my husband and I make them different ways. I add my eggs and not really mess with them. I let them sit for a few minutes and let them get a little fluffy, then I give them either a flip or a stir. Then remove from heat when they are done. My husband stirs them often till they are done. So it's chefs choice how you prepare them. Just set these aside for a while and we will get back to them. Remember we are not making these to serve right away, so everything can be cool.
Okay, back to the potatoes. Once cool you start by cutting the potatoes into small bit size pieces. The smaller the better so when you take a bit of the burrito you get all the ingredients and not just a giant bit of potatoes. While you are the chopping train go ahead and chop your onion and bell pepper, those are also for the potatoes. Once those are all chopped add them to a big bowl and toss with some oil and all the seasonings listed above. Time to get cooking... finally! I cook mine in my cast iron skillet. Drizzle olive oil to cover the whole pan and turn the stove onto medium. Once the pan is warm, go ahead and add everything from the bowl. Since your potatoes require stirring every few minutes which will take some time, I do a little multitasking and at the same time the potatoes are cooking I turn on another skillet (or use the one you cooked your eggs on depending on its mess) onto medium for the sausages to get cooking. Cook your sausage according to the directions on its package. Once cooked fully, put on a cutting board and when cool cut into bite size pieces. Again, back to the potatoes, once they are completely cooked, (browned and a little crunch) go ahead and remove from heat.
Still home prepping, but now time to start your assembly line. I lay out all the tortillas on the counter and cutting boards, basically all my free space since my kitchen is "cozy". Go ahead and start add your eggs, potatoes and cheese. A couple scoopfuls of each, you can see my photos below of how much I added. Go ahead and roll up your burritos. This can take some practicing if never really done before. I have had years of experience from my days working at the taco bar at the local ski resort, Mt. Rose. If you need a quick lesson youtube is always great for stuff like that. Once rolled, go ahead and roll again in the foil. You will be putting that direct on the campfire grill so make sure they are all covered and think enough so not to break while cooking, if needed use 2 pieces of foil per burrito.
Okay, now you're camping!
Yippee! Congrats! Hopefully you have had a successful first night or nights. This is the easy part, go ahead and get a campfire started, and when the flames aren't reaching the grates anymore go ahead and add your burritos. Turn them after several minutes to ensure even cooking. Remove from heat, remove foil and dress up with any toppings you may have brought. BOOM, done, easy like I said!
