Savory Pancakes with Bacon, Fresh Thyme, Fig Jam & Honey

These pancakes are the perfect balance of savory and sweet. The crispy bacon with the fresh thyme and fig jam, oh so yummy. These pair perfect with a nice fresh snowfall!

One of my favorites things in the whole world is when we receive soft gentle snowfall. Its quiet and calm and extremely peaceful. Nothing like it. We are lucky enough to get to experience this type of snowfall often. But even with the gentleness of this snow, it still creates work. Time to get shoveling....again. But on the mornings that the snow decides to take a break, we take advantage and go to work in the kitchen instead. With the shortcut of using pre-made batter, these don't really require that much effort for the amount of flavor that you get. Which give you even MORE of a much needed break!

Savory Bacon, Thyme and Fig Pancakes - Serves about 4
Use your own favorite pancake pre-mix to help save time - We use a simple organic buttermilk blend for this one
A few fresh sprigs of fresh thyme
Good thick cut bacon - chef's choice
A few tbs of good Fig Jam
About 1/4 cup of Honey (you are just drizzling it on so no real need to measure)
Up to 3 tbsp. Butter
Syrup - again chefs choice
Foil (for my bacon, I cook it in the oven)
Bacon: Lets get our home smelling of bacon! I use the oven for this so it creates more space on the stove top and its an easy clean up. Get your oven to temp up to 400F. Then use a baking sheet covered with foil. Arrange your bacon so they are not touching. I personally fill the sheet with bacon, we are a bacon loving family. "Siri, set my timer for 10 minutes". Once I get this timer is started I move to the pancakes. Then I like to flip the bacon when the timer goes off. I then keep a close eye for the remaining time, maybe 7-10 more mins depending on the thickness of your bacon. Look for a deep-golden brown color and it will be nice a crispy when done. When that bacon is cooked take it out and let cool on a paper towel to help soak up the grease.
Pancakes: Depending on how long it takes for your pan to warm up (I have an old electric stoves so it takes FOREVER to heat a pan up) turn your stove on to medium heat. I use my larger cast iron pan, honestly not sure why, I think it creates a nice golden brown pancake. Add about 1/4 tbs of butter to the pan. While that it getting warm, pre-make your pancake mix according to the directions. Add about 1-2 tbs of fig jam to your batter. Mix it up really well to ensure the clump of jam gets mixed up well. Prep the thyme by stripping the leaves off the little sticks give a nice rough chop and add to the batter, about 1 tbs. Great! Lets get making those pancakes.
For this recipe I tend to make the pancakes a little smaller, I get about 3 to a pan, I keep them small to flip better. The butter in your pan is really important for these pancakes so they don't stick from the fig jam. Before you flip, remember to drizzle a little honey in the pancakes. Once they start to bubble all around they are ready to flip. I use a flexible non-stick spatula when flipping to help get a great flip! Cook for another few minutes, remove them from the pan and start over with your next batch. Continue until you have reached your desired amount of pancakes.
Serve your pancakes with chopped up thyme, your chopped up crunchy bacon, and drizzled with a little syrup. Enjoy!
