Sweet Pepper Jam & Sausage Breakfast Sandwiches

With a sweet pepper jam as your secret weapon, your family will be super impressed with your restaurant quality breakfast sandwich. You will have them wondering why you don't cook like this every morning!



My little brother recently returned from backpacking around Europe for 5 weeks by himself! Seriously amazing! I have never done anything like that! So when he returned and it was ALSO his birthday, this was the perfect time to debut my favorite new breakfast. This is pretty easy overall, the hardest part is making your eggs, which can be chefs choice, fried or scrambled, I have done both ways. Today I choose to make fried (which honestly I am still learning).


To make this meal just a tad more beautiful, my mom set the table; fresh picked flowers from her garden (she is a master at gardening!), table cloth from our family trip to Italy last summer, water pitcher was my grandmas who recently passed, plates and cups from Williams Sonoma (our favorite place!) also a few other random plates from my moms life. My mom always makes sure to make a beautiful table no matter how big or small the meal. It's kinda her thing.

Pepper Jam and Sausage Breakfast Sandwiches - Serves 4

  • 4 English Muffins (when available I use a local made thick sourdough toaster muffin)

  • 4 Eggs

  • 4 Breakfast Sausage Patties (I use the ones already in circles to save time)

  • Arugula

  • Cheese (chefs choice)

  • Some sort of Pepper Jelly - I normally use a Red Pepper Jelly, but my mom had a Jalepeno Pepper Jelly (which wasn't spicy)

  • Salt - a pinch over each egg

  • Pepper - a sprinkle over each egg

  • Garlic Powder - also a sprinkle over each egg

  • Butter - A little in the pan for your eggs

Lets Get Cooking!

Start by getting your pan warm for the sausage, I use a large cast iron skillet, since these take the longest so best to start here. Follow the instructions on the packaging for the type of sausage your choice. Once cooked remove from heat.


Use another skillet to cook your eggs. I use a non-stick for easy clean up and so eggs won't stick to your pan, pretty important when making fried eggs. Cook your eggs your preferred method. For fried, add a little butter in your pan on medium high. Carefully crack your egg (one egg at a time). Turn heat to low. Add your salt, pepper and garlic powder right on top of the egg. Keep checking in on them, they can over cook if you are enjoying your cup of coffee too much and ignoring your eggs. I would say about 5 or 6 mins, I sometimes add a lid to help cook the yoke more. I will also flip the eggs if I'm feeling lucky!


Lets toast those buns! I mean english muffins....As you cook your eggs, start toasting your bread. As you remove them from heat, spread a little butter and jelly on the inside pieces of your toast. Next add your sausage, cheese and arugula. Then when your eggs are done just slide the egg from the pan onto your built sandwich. And just like that you have made a restaurant worthy breakfast sandwich! So Easy!


***Other notes: Feel free to experiment with different types of jelly, its highly recommended!
