Camping Veggies and Steak Skewers

These veggies and steak skewers happen to be the BEST meal while camping. They are so so so simple, easy and actually healthy!



Camping is a time filled with dirty kids, late bedtimes, tons of playing and LOTS of hard work! Holy cow how camping changed with kids. But man is it worth it! To help with the dirty days of camping I do a lot of our food prep work at home. I spend the day before we leave in the kitchen cooking for the next several days. This helps to maximize the amount of adventuring while camping. I also love it since it creates less dish washing which I really don't like to do at home let alone while surrounded by dirt, nothing ever feels clean.




This healthy, easy meal is filled with the smokey flavor of the campfire mixed with fresh veggies, just the perfect pair for a night camping.

Summer = Camping Season


We celebrated this years summer solstice by taking the twins camping. Starting the season off with a fun filled 2-day camping trip several hours north of us at Burney Falls State Park. It was stunning! It was really toddler friendly, few hiking trails that were a mile or less and had lots of shade. You can find relief from the hot sun down by the waterfall and you can get right down to it! So cool! There is also a large lake with a nice swim beach to spend the hot days with the kiddos. We had campsite 42, HIGHLY recommended; a huge site with the canyon right behind us so we had fantastic views, colorful sunsets and tons of privacy.



Grilling Veggies and Steak Skewers - 4 people

  • Zucchini - 4 (1 per person)

  • Mushrooms - about 20 (the bigger the better so they don't fall through the bbq grates)

  • Baby Bell peppers - about 2 per person (I just prefer to use the smaller ones, but pick the ones you and your family prefer)

  • Skirt Steak

  • Olive Oil - 1/4 of a cup (ish); some for veggies, some for steak

  • Salt - couple tablespoons; some veggies, some for steak

  • Garlic Powder - 1 tablespoon


I do this prep at home: Wash all your veggies and dry. Cut the zucchini in half, length wise. Take the bottoms of the mushrooms off, I just pull them out. Then cute the tops off the bell peppers. Mix all your veggies in a bag or whatever you wish to store them in for camping. I used a tupperware container with a nice fitting lid to help keep them from getting squished by other food in the cooler. Then cover the veggies with olive oil, salt and garlic powder. Cover and they are ready till you are ready to cook.


Still home prepping, I move to the steak. Cut the steak, longwise against the grain. For the thickness they are about 1 inch thick. Then I use one - two steak strips for one skewer depending on the steak. Sprinkle with a little olive oil and salt. I store them on a sheet pan and cover with foil, it fits nicely on top of everything in our cooler.


Okay, now you're camping! Yippee! Okay, now comes the easy part, start a fire! Then depending on the bbq/grates on the fire pit you can either put everything on while their is still a flame or wait till the flames calm down then add everything. Just make sure the grill is hot for your steak so you get a good sear. It won't take long for everything to cook, so hang close by. Keep rotating your veggies so they cook evenly. Flip the steak only once.


Once the veggies are done, they will start to turn a little soft (it took about 15 mins or so for mine but keep checking them so they don't get soggy) and the steak you cook to your liking, (I prefer medium rare) it took about 6-7 mins, or about 3 mins a side. That't it! Simple, easy, smokey and a nice fresh healthy camping meal. Enjoy!


***Other notes - You are more than welcome to use your favorite veggies if you are not fond of the ones I used. Just make sure that your adjust the way you chop them or keep them large so not to loose them to the fire by falling through the grate.
